
DalterFood Group has launched a line of Parmigiano Reggiano shavings aimed at light, fresh summer dishes, positioning the cheese as a quick‑add flavor boost for ready‑to‑eat salads, pasta salads and seasonal meals.
New cheese shavings target summer menus
The shavings are produced from PDO‑certified Parmigiano Reggiano made in the firm’s own dairies in the Reggio Emilia Apennines. A short, controlled supply chain helps preserve the raw material quality while keeping the product easy to handle.
These thin slices are also promoted as a garnish for carpaccio, packaged cured meats and ready‑made pizzas, where they can add a premium touch without extra prep work.
From a broader perspective, the move reflects a growing trend among food manufacturers to offer convenient, high‑quality ingredients that fit the fast‑service model of modern eateries. As consumers look for quick meals that still feel indulgent, products like these shavings give chefs a way to enhance flavor without complicating production lines.
In addition to the standard offering, the group provides an organic‑certified version that meets EU organic farming standards, allowing brands to market a higher‑value product line.
The launch coincides with the June market calendar.
Custom sizes and packaging options
Customers can choose square cuts of 2 × 2 cm, 4 × 4 cm or 5 × 5 cm, letting them match the cheese piece to the intended presentation. The consultant‑style approach means the size and packaging are tailored to each client’s recipe and distribution needs.
Packaging comes in 500g and 1000g trays suitable for industrial use, plus single‑serve sachets made from recyclable plastic. The sachets are meant for inclusion in ready‑to‑eat salads, soups or meat trays, adding a service component while aiming to cut waste.
Another product in the portfolio is Spinoro shavings, a mature hard cheese made from milk sourced entirely from Italian cows in the Po Valley. Because it uses microbial rennet, Spinoro is suitable for vegetarians, expanding options for brands that need to meet specific dietary preferences.
The company says the flexible format and sustainable packaging reinforce its role as a strategic partner for the food industry, offering cheese solutions that align with production, application and market positioning requirements.
